For me, my number one is probably BioShock. The water effects already looked incredible 15 years ago, so I can only imagine how Rapture would look with 2023-onward technology.

ancient roguelikes like angband or sil
but with the caveat of no modern game design trends
just make it pretty 3d models in a pretty 3d world still moving on a grid in a turn based fashion

As far as I know all those games are still under active development and there are more and more spinoffs and “inspired by” games each year. Have you played Caves of Qud? It’s very well recommended.
