It’s pretty obvious that the mods are biased towards white people and the Midwesterners in particular. You can make fun of white people all you want, but the moment you even dare criticise a black person then the kid gloves come off and the Nazi mods ban you.
I’m Midwestern and honestly, I’m offended by the comments I see here about Midwestern cooking. I know a lot of Midwestern people on this site feel the same but are afraid to speak up because of the authoritarian mods.
We don’t all eat deep dish pizza. I come from Minnesota. Here we have a dish called Tater Tot hotdish. It’s meat, tater tots, and onions all served submerged in cream of mushroom soup. Does that sound bad to you?

Same. I’m from Detroit, and I’m tired of Detroit pizza being overlooked. We cook it in a motor oil drip pan, with some of the motor oil still coating the surface, giving the pizza a uniquely combustible diesel flavor. Anyone who naysays American regional cuisine can shove it

Hot dish is so disgusting. I know it’s a poverty food thing but that’s not an excuse. Plenty of cultures have poverty food that makes the best of limited ingredients. Hot dish boldly asks “how can i take several ingredients that are fine on their own and combine them in the least palatable way possible?”
Poverty food in the modern west is so strange. I grew up on a lot of it. Most of it is opening the cupboard and throwing canned goods in a pot and seeing what happens.
My favorites:
Pork chops casserole with cream of mushroom, onions, garlic, stale bread (or boxed stuffing) served with a can of green beans.
Can of crushed tomatoes, can of salmon, whatever spices we have (nowadays I make it with curry and cumin), onions, and a bit of ketchup. served on rice.
But I have a Trini step mom, and the poverty food she had was so much… cheaper, but harder to make (curry chicken liver, one pot curry chiken/chickpeas, microwave Baigan Choka, bake/roti).
I think a big push for the western (modern) poverty dishes is speed of preparation. People don’t have time to cook somewhat complex meals after work. Throw shit in a pot, and eat in an hour.
Also fuck it, sharing the microwave baigan choka recipe cause it’s awesome and I’ve never seen it outside of my step family:
Preface: Choka is just like… a mash, Baigan is eggplant (could be wrong I’m mayo).
Get a nice eggplant, cut a bunch of slits throughout (maybe 15ish, just poke a knife into it).
Put 5+ garlic cloves (peeled, can crush em for a quick peel) into some of the slits.
Toss it in a microwave for 10 mins.
while it’s microwaving, cook some onions in oil (maybe a bit extra oil) until soft and translucent.
Transfer the oil and onions into a bowl.
Once the Eggplant is done, it will probably be very deflated and split, scrape out the flesh into the same bowl.
Quickly mash everything (a fork will be enough).
Season with salt and pepper.
Beast eaten with some fresh flakey Roti.
IDK the relative levels of access to food but I used to live in a city where the large majority-black neighborhood had literally no supermarkets

Yeah, I had friends whose parents were pretty solidly “middle class” but made hotdish a lot. There are very cheap, poverty versions, but I think the more overarching character is saving time and effort. It is more of a thing of, usually, the mother needing to throw together a home cooked dinner after working all day and picking up the kids from soccer practice. That is why there are several versions where it is something to the effect of put in ground beef, pour canned veggies on top of that, pour cream of mushroom on top of that and top with chow mein and bake.
Okay, I will make fun of a lot of things, but how is hotdish disgusting? It is literally anything you want to layer in a dish and bake. You want vegan with spices, there’s a hotdish for that. You want chicken and vegetables, there’s a hotdish for that. Everyone just focuses on the weird ones.

Maybe in NYC this is true, but not in the rest of the state. Actually Upstate NY feels Midwest-y in a lot of ways

Have you considered that this is part of why people hate New Yorkers? It’s not that hard to put on a smile and not be an asshole all the time. NYC and Boston are full of the most obnoxious assholes on planet earth.
Compared to venomous midwest passive aggression, poisonous southern hospitality, the fake engagement of california, or the total freeze out you get in seattle having someone scream in your face can be refreshingly honest and direct.
