So I’ve made it myself before, but it’s a bit of a chore. Has anyone used a kit or anything before? Any recommendations?

I got my current starter from ebay for ~$4. They claimed it was a 200 yo starter from san fran. It took about 4 days to get going. I’ve heard that regardless where you get the starter from over time the bacteria in your area/flour/kitchen will eventually dominate any way so a kit saves a few weeks of time but you end up with the same colony as if you started from fresh. King Arthur has a fresh starter (~$10) which might be the fastest way but I’ve never tried it.

Gotta sanitize your kitchen, then bring in a TON of starter. Now your house is a San Franciscan yeast enclave.

Sometimes you can also call a local bakery and ask for some. They may not even charge you for it.
