It’s a fantasy genre, has power levels and stuff. Based mostly on Taoism and some influences of Buddhism, but very high fantasy with stuff like killing god-tier beings in the end. I find it really weirdly appealing, especially in contrast to anime fantasy nowadays.

They’re talking about Wuxia shows, a genre of Chinese literature/television where martial arts masters meditate regularly to gain supernatural powers / immortality, this is called cultivation. Crouching Tiger Hidden Dragon is probably the most well known to western audiences.
