I’m looking for something I could use for the purpose of local organizing. I don’t trust Discord for this purpose, and definitely don’t trust gmail for an email client. Any good alternatives for either?

I think there are some posts in !tactics@hexbear.net you should check out. But as ScreamoBMO said, we use matrix as a chat app to organize the mod team.

Apparently they plan to make more videos in the series explaining more about how it works but I haven’t seen any yet.

For email, https://disroot.org might fit your bill. If you’re paranoid enough to deal with a terrible user interface then learn how to use PGP for email, it works with any provider.
