Textured vegetable protein (TVP). It’s basically dried out little pieces of soy that resembles ground beef when you rehydrate it. Or soy curls, they’re just a bigger version of TVP. You just have to soak it at least half an hour and you can flavor it however you want. I can find them both in my local stores and they’re not that expensive
