i found a nice big one at the store and i intend to eat that bad boy. what should i do with it? i’ve got a bunch of tabbouleh leftover from yesterday, maybe something that would go with that? but i’m not really feeling baba ghanoush. or maybe stewed with some crushed tomatoes and things to put over pasta.

I will try to find the actual recipe but, I like eggplant lasagna. Pretty much identical to regular lasagna except no lasagna noodles (lol) and no meat, layer all other ingredients and layer eggplant sliced longways

two solutions: the easiest, fry very well your eggplant, it should be very soft, season and eat with grated parmesan. Solution 2 put the whole eggplant in the oven at 180c for 1 hour, peel, cut in cubes, add garlic and season, serve cold

I like to cut it in cubes, put it in a large saucepan and cook until soft with some onions, garlic, bell peppers, spices, herbs and whatever else tickles my fancy at the time, then put it all in a food processor or puree it with a stick blender, refrigerate it and use it as a spread to eat with rice cakes. Makes for a delicious low-calorie snack.

Sauteed in a big pan with diced or whole peeled tomatoes, lotsa garlic, and then a dark green like swiss chard or spinach or kale. Eat it over rice or pasta.

You can also poach eggs in the sauce like shakshuka and then eat it with toast - I cannot overstate how good this is.

Peel the eggplants

Cut it in cubes together with tomatoes

Add some vinegar, sugar and olive oil

Oven it till everything is a mush
