Growing up we’d get whole chickens (incl. Head, feet. Basically something slaughtered, drained and de-feathered that morning, fairly typical in China) to eat and my grandfather would get upset if we left any meat on the bones. Good times.
This may be my poverty speaking but have you tried “off cut” recipes? I had a bunch of chicken feet growing up in Hubei and I insist it’s the most underrated part of the chicken.
