people there are absolutely terrifying, but they make a bomb ass barbeque sauce that you can only get there. It’s called Cairo Sauce. It’s more of a vinegary BBQ sauce, not the bullshit savory/sweet stuff they use in they south.

also it’s pronounced “KAY-roh,” but there are a ton of small towns on the southern tip of Illinois (Cairo is literally as far south as you can go and still be in Illinois) that are named after Egyptian cities, and I have no idea why.

That’s just a carolina-style bbq sauce, I’m sure theirs is a unique recipe or whatever but vinegar sauces aren’t particularly special.

Also incidentally, that whole region does the same thing with French city names too, like Ver-sales

The Mississippi River. Memphis, Cairo, Luxor, etc. they’re all named that way to allude to the Nile. Like when the colonists would come over, name a city Plymouth or Sussex or Boston, then go back to England and go “See! The Indians want us there! They named their cities after ours! A new life awaits you in the Off-world colonies!”
