For a long time, pizza was the southern Italian food, while northern Italians, who are more white-passing, had different dishes.

This was part of stereotypes for a while, where Northerners looked down on Southerners and the foods associated with them, and the Southerners in turn scoffed at the lack of taste that the Northerners had. “Let them eat polenta” was an example of this sentiment.
