Cut it from the bottom towards a branch and twist the knife when you get through the stalk

are you using a serrated knife or something? or one that’s too small? cause you should just be able to put the knife straight through it.
can’t you just use like a cheese shredder on it? if you don’t mind riced cauliflower anyways.
I usually chop the stalk off above where it branches and all the florets become separated naturally
