People say they taste like lobster. I think this is a bit of an exaggeration but I can see where they’re coming from, definitely in texture.

I actually listened to this before - Paul stametz is probably the biggest name in mycology - although he is a pretty big myco simp, selling it hard everywhere.

Stamets’ Growing Gourmet and Medicinal Mushrooms is the gold standard cultivation guide. 517 pages in my edition with exhaustively detailed information about all known culinary and medicinal mushrooms. He’s like Terrence McKenna for me in that I don’t like the woo but understand the genius.

But maybe I’ll give it a shot if I can find it around here. My biggest problem with mushrooms is the texture, so more lobster like texture may help.
There are a few I’d recommend for their texture because I grew up dreading soggy portabellas. Lion’s mane is a good introduction to how varied they can be, but I’d compare it more to crab than lobster in texture since it’s more flaky than chewy. Chicken of the woods is a wild forage in hardwood forests but is very texturally similar to chicken. Hen of the woods and oyster mushrooms fry up like bacon with a more intense umami contribution to dishes. King oysters are dense enough to grill and have the texture and taste of pork belly.
I found my first one in the wild a couple weeks ago! They’re so good!
