If you want some veggies I would take any veg you have and make a sabzi (basically a spiced stir fry) and have that on the side. Adds some variety day to day.
And if you’re veg you can use ghee as the base oil for most North Indian food and it adds something extra.
south indian daal fry is a grate dish to eat with naan or chapati as well
Ghee is fucking amazing - Costco near us started carrying it & we buy 6 jars at a time. Revolutionized home cooking. Also feels good as hell to have some shelf stable butter.
I’m gonna get a few cases of it to have a multi-year supply on hand.

Veggie curry rules. You can get premade sauces from Kroger’s or Aldi’s for less than 2 bucks where I live. I usually peel and cook down an entire eggplant into the sauce ( just saute it and reduce with beer, stock- whatever and mash it in the pot). Then I parboiled potatoes, frozen peas and carrots, chickpeas and bell peppers. Serve with naan or jasmin/basmati rice (worth a 20$ 10lb bag). I make this at least once a month and we have food for 3 for 3 nights. PS omnivore here cutting back don’t even miss the meat.
