Volume because I do not own a scale. Dutch oven preheated at 425F for 30 min, remove lid partway through. Forgot to score this loaf, normally do. Thanks for the steam tip, Ill look into how to actually implement that.

Mellows slightly, but I didn’t have a ton of vinegar. The brine also doesn’t have sugar so its very vegetal.

I used about 1/3-1/4 vinegar. (whatever was left in my bottle) and not a ton of salt, I’d say double the amount I would use if boiling pasta. Sorry for imprecise amounts, I threw it together last minute to make my celery last longer.
